Pate Brisee Dough

Works great for quiches

- 2 1/2 cups all-purpose flour
- 2 sticks chilled unsalted butter, diced
- 1/2 cup ice water
- salt/pepper

Makes enough for about 24 mini-tartlets, or 2 x 9-inch tart crusts.
