Aha, I've finally tweaked my recipe to get a moist final product, that's light and delicious!
Pumpkin Spice Bread
Dry ingredients
- 3 cups King Arthur Unbleached flour
- 2 tsp baking soda
- 2 tsp salt
Wet ingredients
- 1/2 cup brown sugar
- 2 stick softened butter
- 4 large eggs
- 3/4 cup yogurt or sour cream
- 1 lb Libby's Easy Pumpkin Pie mix
- Cream sugar and butter together.
- Add eggs, yogurt, pumpkin mix.
- Mix dry ingredients together.
- Add dry ingredients incrementally. Add raisins (optional) last.
- Bake at 350 degrees F for ~ 75 minutes, or until knife inserted in the middle comes out clean.
- Makes about 2 loaves.
